en They are back here again, hundreds of them. Swallows — barn swallows, tree swallows, banks swallows, rough wing swallows — all birds that normally would have gone a long time ago.

en And, eating with the harvest creates a kind of year-round square meal. Eating locally also creates a link between people and food. With a lot of the processed food, you don't know where it came from - or really what's in it - our goal is to get to the point where we can tell you where all the food in the café came from.

en The quickest way to end up with takeout food that's not as healthy is to not put any advance thought into meals. I don't mean to knock takeout -- I like eating out as much as the next person; I enjoy a pizza or takeout Chinese or Indian food. But most fast foods are cooked with lots of fat and salt; that's why they taste great. It's not a good way to eat every day, economically, and it's not the healthiest way to eat every day.

en There's a desire to cook more healthful food and you see it in a variety of ways, but taste still wins. If it doesn't taste good, it doesn't matter. Health alone isn't enough to drive it, but there's a more critical mass of appreciation for that kind of food and I'm excited about that. It's a fascinating time to be working with food.

en Emotional eating has nothing to do with eating to stay fit and healthy and it has everything to do with comforting yourself, or trying to fill a void in your life with food. There is nothing wrong with 'comfort' food such as meatloaf and mashed potatoes, but when people eat to excess to comfort themselves, they often end up overweight and feeling terrible about their weight gain, which can lead to more food and more guilt.

en And then there's some swallows. Tree swallows and green-violet swallows.

en We are living in a world that promotes obesity, ... We have become more sedentary. We have more eating opportunities and those opportunities have higher calorie-density food. It really becomes a day-to-day approach to changing behaviors to eating and physical activity. A big step in the right direction is to build in at least 30 minutes a day of moderate physical activity.
