There's no longer just one restaurant. We're trying to blend local flavor of the area with some franchise food.

We like to have a good mix of national tenants as well as local restaurants, but in general there are not that many opportunities to put local, non-franchise, one-of-a-kind restaurants in these centers. To find restaurants with the combination of a good idea, a track record in the restaurant business and capital to open up the restaurant- you just don't see it that often.

Great food with real local flavor is just a short cab ride away.

It is a scientifically proven fact that eating a variety of flavors over-stimulates the appetite. Why do you think food companies put so many ingredients in their products? I had to start over in Milwaukee and were able to build a (good) team. When I went to Cleveland (in 1985 as vice-president and GM) we did the same thing with a blend of young players and veterans. This franchise is in the same position. It's essential we blend youth in with veterans. We're going to continue that plan and I can see positive results.

I never worked in a restaurant before. But I love to experiment and I always watch the food shows for ideas. But I still think food is at its best when it's just good food.

The bigger issue here is, to me, that when we can't access our neighbors with food, then farming just dries up. The fact is that all these hurdles that prohibit local food commerce keep what would be millions of dollars circulating in the rural local economy are therefore denied to the local economy. So farmers go out of business and sell to developers.

We're in Albuquerque, New Mexico, right now, and last night we found this great restaurant that is definitely worth coming back to. Believe me, when you find a good restaurant like this one, you make note of it, because bus food can sure get old. They really light up the map.

We really wanted a local flavor, a unique flavor. We wanted to make it different than going out to the Monmouth Mall or the Bridgewater (Commons) Mall.
