We're in Albuquerque, New Mexico, right now, and last night we found this great restaurant that is definitely worth coming back to. Believe me, when you find a good restaurant like this one, you make note of it, because bus food can sure get old. They really light up the map.

If you really want to get beyond just tourist locations, where you aren't dependent on regular customers, then you have to go back to the basics . . . very definitely play down the gimmicks, play down the museum aspects of what you are doing. Make it a different enough restaurant that there's some reason to try it, and if everything else is good, customers will come back.

One can serve society in different ways. My wife and I have chosen to do it this way. We are both working here in the restaurant. I am the host and my wife is working back in the kitchen preparing the food. So this is a family restaurant. And it is our family's gift to the community.

Think fast food restaurant and drive-through windows. We were told it was horrible. This was once a wonderful neighborhood that had gone to pot with the drugs, but it's coming back.

While our customers desire great-tasting food, prepared fast and at a good value, each divergent group wants something very different from us. Although we are meeting many of the needs, we have learned we have an opportunity within an important growth engine in our industry.

Everybody likes to taste beer. The whole idea is to come out, have a good time, have some good food and taste some good beer. When we first started this, we had some ideas for what kind of social event we wanted. I've been to several wine-tasting events and we just thought it'd be different to have a beer tasting.

We love what we're doing ... And we don't have to worry. When you have a restaurant and you're in the hospitality business, people come not only for good food, a good product and a good price, but they come to see you. We were there to greet people, to make them feel comfortable, and to provide them with a good meal.

He was so comfortable. He finished out good, but the other horse drew away from us. Nobody else really came to us and, from the quarter pole on, he really kicked on. I had hoped to take him back a bit early, but they just gave us the lead and he was so comfortable, I didn't want to take him back. He did have a good trip.

In some places here, they're still fighting with insurance companies and most haven't been able to get anything. Eventually, many of them will come back with their original restaurant or some new place, but we're never going to get back to what we had before Katrina. Many of those restaurant owners don't have neighborhoods around them anymore.
