In the 1980s, Americans preferred milk chocolate and sweeter centers. Today, we have seen a shift in consumer preferences, towards darker chocolate and more exotic flavors.

I look for every opportunity to taste chocolate. I've never been involved in an all-chocolate-encompassing event.

As with most fine things, chocolate has its season. There is a simple memory aid that you can use to determine whether it is the correct time to order chocolate dishes: any month whose name contains the letter A, E, or U is the proper time for chocolate.

I come from the record side of the music business and doing a standalone soundtrack has been an intriguing idea for some time. But many of them are not that successful. We were waiting for the right opportunity.
