The primary advantage of controlling the speed of the dough divider according to the dough type or size is that the pressure on the dough is reduced. The more gentle dough handling minimizes the amount of damage done to the dough cell structure and ultimately results in improved product quality.

I like to prepare dough ahead for pizza crusts too. Whenever I bake loaves of whole wheat, anadama, herb, or other breads . . . I just mix up a little extra, package the dough in onepound lots, and freeze it right alongside my other ingredients. Then—when pizza day rolls around—all I have to do is go to the freezer and select one container of crust, one sauce, one sausage, and one cheese . . . thaw everything . . . roll out the dough and spread on the sauce, sausage, and cheese . . . bake my creation at 450°F for about 15 minutes or until the cheese is slightly browned . . . and 'serve 'er up' to a hungry family of four.

As a child I couldn't believe how many people were there for this dinner. As an adult, as far back as I can remember the rolls are the best. My experience has always been I love the spaghetti, I love the salad but the rolls are the best.

If you want to lose 15 pounds, it's not fair to get on the scale the first day of your diet and be discouraged if you didn't lose any weight. If your process and frame of mind are correct, then you'll lose the weight. It's the same thing with Jorge. He's learning the process, and soon he'll see ? we'll all see ? the results.

I could tell a real difference, and it made me proud. His body has always had its own idea of how much weight it should hold, and he's put in a lot of time to get where he can body up against guys who weigh 260 or 270.
