You had this population-wide reduction (in fat). Everyone heard about fats. We wanted to get saturated fats down. One way to do that was to lower total fats. That was the public health message.

Now we are seeing different types of fat as being very important. Don't be afraid of monounsaturated fats and omega-3 fats, but really focus in on saturated fats and trans fat.

It's given companies a new incentive to reformulate their product. They've reduced or eliminated trans fats, increased polyunsaturated fats and lowered saturated fats.
