The problem is you've basically got to start over. Because if you're on a wine list, or you're on a shelf and you can't supply, you lose your placement.

When you put out a movie like King Kong, you'll get a certain amount of shelf space, but once sales slow down, you'll start to lose that shelf space to other titles and that's deadly.

When the average wine bottle on a list costs more than your dinner, when you have to decide between a bottle of wine and your kid's dentist appointment, it's a wine crime and the Wine Patrol is ready to speak out.

That's the most important thing. You don't want to lose the hard work of all those placements. It becomes doubly hard the following year, no matter how good your wine is, to get that placement back.

The bar is a really easy place to save money. Instead of just offering everything from top-shelf liquor to house wine, just limit it to wine, beer and soft drinks.

We pulled all the supply from them off the shelf until we get official assurance that the supply isn't coming from Biomedical.

We don't think you need to pay $50 for quality wines, so we kept the wine list reasonable. The only really expensive wines were customer requests. You can go to chain restaurants and get a bad glass of wine for $9. Here, you'll get a glass of great wine for less.

There are wine cellars . . . in the $100,000-plus range. Whatever you build, plan on spending $3 to $5 per bottle of wine for racking with a quality wood.
